Description

Authentic Mexican Rice is a flavorful and aromatic side dish made with long-grain white rice, sautéed onions, garlic, tomatoes, and seasoned with cumin and salt. Cooked gently in chicken or vegetable broth, this classic Mexican staple is perfect to accompany any meal and can be customized with peas or carrots for added texture and color.

Ingredients

Scale

Rice Mixture

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, diced (or 1/2 cup canned diced tomatoes)
  • 2 cups chicken broth (or vegetable broth for a vegetarian option)
  • 1 teaspoon cumin
  • 1 teaspoon salt (adjust to taste)

Optional

  • 1/2 cup frozen peas or carrots
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Rinse the Rice: Begin by rinsing the rice under cold water using a fine mesh strainer to remove excess starch. This helps achieve fluffy, separated grains after cooking.
  2. Sauté Onion: Heat the vegetable oil in a medium saucepan over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until the onion becomes translucent and soft.
  3. Add Garlic: Add the minced garlic to the pan and continue to sauté for an additional minute, allowing the garlic to release its aroma without burning.
  4. Toast Rice: Pour the rinsed rice into the pan and stir frequently for about 2-3 minutes, letting the rice get lightly toasted and coated with oil and aromatic flavors.
  5. Add Tomatoes and Seasoning: Stir in the diced tomatoes, chicken broth, cumin, and salt. If using peas or carrots, add them at this stage as well. Bring the mixture to a gentle boil.
  6. Simmer: Reduce the heat to low, cover the pot with a lid, and let it simmer for 15-18 minutes, allowing the rice to absorb the broth and cook through.
  7. Rest the Rice: Remove the pot from the heat but keep it covered for an additional 5 minutes to let the rice steam and settle.
  8. Fluff and Garnish: Fluff the rice gently with a fork to separate the grains. Garnish with freshly chopped cilantro and serve hot as a delicious side dish.

Notes

  • Rinsing the rice is essential to remove excess starch and prevent clumping.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Add frozen peas or carrots for extra flavor and nutrition.
  • If you prefer a spicier version, add a pinch of chili powder or chopped jalapeños.
  • Adjust salt according to taste and dietary preference.
