Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves, drizzle with olive oil, then wrap it tightly in aluminum foil. Place the wrapped garlic in the oven and roast for about 30 minutes until the cloves are soft and caramelized. Remove and let cool slightly.
  2. Prepare the Feta: Place the block of feta cheese in a small baking dish. Drizzle with olive oil, then sprinkle with dried oregano, red pepper flakes if using, salt, and pepper to taste, ensuring the seasoning is evenly distributed.
  3. Bake the Feta: After the garlic is roasted, increase the oven temperature to 425°F (220°C). Place the baking dish with the seasoned feta in the oven and bake for 15-20 minutes, until the cheese is soft and slightly golden on top.
  4. Combine and Serve: When the garlic is cool enough to handle, squeeze the softened roasted cloves out of their skins directly into the baked feta. Use a fork to mash and mix the feta and garlic together until creamy and well combined. Garnish with fresh herbs and an extra drizzle of olive oil.
