This creamy and flavorful Boursin Chicken recipe features tender chicken breasts baked with a luscious mixture of Boursin cheese, sautéed garlic, and fresh spinach, topped with crunchy panko breadcrumbs and Parmesan cheese for a delightful golden crust. Ready in just 45 minutes, this dish is perfect for a comforting and elegant dinner.

Ingredients

Scale

Chicken and Topping

  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese

Cheese and Spinach Mixture

  • 8 oz Boursin cheese (any flavor)
  • 2 cups fresh spinach
  • 3 garlic cloves, minced
  • 2 tbsp olive oil

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish to prevent the chicken from sticking.
  2. Sauté garlic and spinach: In a skillet over medium heat, warm the olive oil and sauté the minced garlic for 1 minute until fragrant. Add the fresh spinach and cook until it wilts completely.
  3. Melt in cheese: Remove the skillet from the heat and stir in the Boursin cheese until it melts into a creamy, well combined mixture with the garlic and spinach.
  4. Prepare chicken: Place the chicken breasts evenly in the prepared baking dish and pour the creamy spinach and cheese mixture over them, ensuring each piece is well coated.
  5. Add toppings: Sprinkle the panko breadcrumbs evenly over the chicken, then top with the grated Parmesan cheese for a crunchy, golden finish.
  6. Bake: Bake the chicken uncovered in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the topping is golden brown and crispy.
  7. Rest and serve: Let the chicken rest for 5 minutes after baking to allow the juices to redistribute before serving.

Notes

  • You can substitute fresh spinach with frozen spinach; just make sure to thaw and squeeze out excess water before cooking.
  • Any flavor of Boursin cheese works well – try garlic & herb, shallot & chive, or pepper for different variations.
  • Use a meat thermometer to ensure the chicken is safely cooked to 165°F (74°C).
  • For a gluten-free version, substitute panko breadcrumbs with gluten-free breadcrumbs or crushed nuts.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
