Instructions
- Heat the oil: In a large Dutch oven, heat 2 tablespoons of olive oil over medium heat to prepare for sautéing the vegetables.
- Sauté vegetables: Add the diced onions, red, yellow, and orange bell peppers, along with the diced tomatoes to the heated oil. Cook them on medium-high heat for 4 to 6 minutes, stirring occasionally until they soften and begin to release their flavors.
- Add aromatics and seasoning: Stir in 3 teaspoons of minced garlic, 1 teaspoon of fresh thyme, salt, pepper, and 1 tablespoon of tomato paste. Combine everything thoroughly and continue cooking for 2 more minutes to deepen the flavors.
