  • 1 teaspoon lemon zest plus 2 tablespoons lemon juice (from 1 lemon)
  • 1 teaspoon pure vanilla extract

Sour Cream Topping:

  • 1/2 cup confectioners’ sugar
  • 2 tablespoons sour cream
  • 1/4 teaspoon pure vanilla extract
  • Pinch kosher salt

Instructions

  1. Toast Pecans: Preheat the oven to 350°F (175°C). Spread 1/2 cup pecan halves on a rimmed baking sheet and toast for 10-12 minutes until fragrant and lightly browned. Allow to cool, then chop finely for use in the carrot cake batter and garnish.
  2. Prepare Carrot Cake Batter: In a large bowl, mix together the toasted pecans, flour, baking powder, baking soda, cinnamon, ground ginger, and a pinch of kosher salt.
