Instructions
- Melt the Chocolate: Place chocolate chips or broken chunks of semi-sweet chocolate in a microwave-safe bowl. Microwave for 60 to 80 seconds until the chocolate is 90% melted. Remove from the microwave and stir until fully melted to achieve a glossy finish.
- Combine Ingredients: Add the toasted almonds, salt, and vanilla extract to the melted chocolate. Stir well until all ingredients are evenly combined. For a higher almond-to-chocolate ratio, add an extra 2 tablespoons of almonds.
- Form Clusters: Line a baking sheet with parchment paper. Using a tablespoon, scoop mounds of the chocolate-almond mixture onto the parchment paper.
- Add Toppings and Chill: Optionally sprinkle colored sprinkles on top of each cluster. Place the baking sheet in the refrigerator and let the clusters set for at least 4 hours until firm.
- Store: Store the almond clusters in an airtight container at room temperature for a few days or refrigerate for up to one month.
