These no-bake Chocolate Peanut Butter Cornflake Bites combine creamy peanut butter, crunchy cornflakes, and rich dark chocolate for a quick, delicious treat. - 170g smooth peanut butter
- 2 tbsp coconut oil (optional, omit if using runny peanut butter)
- 60ml maple syrup
- 80g cornflakes or crunchy cereal of choice
- Pinch of salt

- 150g dark chocolate (70% cocoa preferred)
- 1 tsp coconut oil
Instructions
- Combine wet ingredients: Add peanut butter, coconut oil (if using), maple syrup, and a pinch of salt to a saucepan. Heat gently over low flame until everything softens and combines into a smooth mixture.
- Mix in cornflakes: Remove from heat and fold in the cornflakes carefully until each flake is coated well with the peanut butter mixture.
- Shape the bites: Divide the mixture into your chosen moulds (small round moulds recommended) or press it evenly into a loaf tin lined with baking paper for bars.
- Freeze to set: Freeze for about 2 hours or until firm. Once set, carefully remove the bites from the moulds or slice the loaf tin mixture into bars.
- Melt chocolate coating: Break up the dark chocolate in a heatproof bowl, add 1 tsp coconut oil, and melt gently in the microwave (stirring every 10 seconds to avoid burning) or using a double boiler method.
- Dip bites in chocolate: Dip each cornflake bite or bar into the melted chocolate, then place on a baking paper-lined tray.
- Chill for chocolate to set: Transfer the tray to the refrigerator and chill until the chocolate hardens.
- Storage: Store the finished chocolate peanut butter cornflake bites in an airtight container in the freezer. Before serving, remove them about 20 minutes ahead to soften slightly.
Notes
- If your peanut butter is runny, omit the coconut oil to avoid softness.
- You can substitute maple syrup with other liquid sweeteners like honey, agave, or sugar-free alternatives for fewer calories.
