Ingredients
Scale
Crust
- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
Filling
- 3 cups sweetened shredded coconut
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup semi-sweet chocolate chips (optional)
Topping
- 1/2 cup toasted shredded coconut
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper to ensure easy removal of the bars later.
- Cream Butter and Sugar: In a large bowl, beat together the unsalted butter and granulated sugar until the mixture is light and fluffy, creating a smooth base for the crust.
- Add Dry Ingredients: Mix in the all-purpose flour and salt until a crumbly dough forms, which will serve as the crust of your bars.
- Form and Bake Crust: Press the dough evenly into the prepared baking dish and bake for 12 to 15 minutes, or until the edges are lightly golden. This step sets the base layer.
- Prepare Coconut Filling: While the crust is baking, combine the sweetened shredded coconut, sweetened condensed milk, vanilla extract, and egg in a separate bowl until well incorporated.
- Add Chocolate Chips (Optional): If desired, stir chocolate chips into the coconut mixture, or save them to sprinkle on top of the crust after it bakes.
- Assemble Bars: Once the crust is out of the oven and slightly cooled, sprinkle the reserved chocolate chips (if any) over it, then spread the coconut filling evenly over the crust.
- Add Toasted Coconut: Sprinkle the toasted shredded coconut over the top of the filling to add flavor and texture.
- Bake Again: Return the dish to the oven and bake for 20 to 25 minutes until the top is golden brown and the filling is set.
- Cool and Refrigerate: Allow the bars to cool completely, then refrigerate for at least 30 minutes before slicing into 24 squares for serving.
Notes
- For best results, use unsalted butter and toast the shredded coconut yourself to enhance the flavor.
- Chocolate chips are optional, but they add a delightful richness if included.
- Make sure to cool the bars fully and refrigerate before slicing to maintain their shape.
- These bars can be stored in an airtight container in the refrigerator for up to 5 days.
