Cookie Dough Base and Topping

Cheesecake Filling

- ½ cup granulated sugar
- 1 large egg, room temperature
- ½ tsp pure vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×9 inch square baking pan with baking spray and line it with parchment paper to ensure easy removal of the bars after baking.
- Form the Crust: Take about 8 portions of the cookie dough, or approximately two-thirds of the total dough, and press it evenly into the bottom of the prepared pan to create a firm cookie base.
- Beat Cream Cheese: Using a stand mixer or hand mixer, beat the softened cream cheese until it becomes light and fluffy, which helps create a smooth cheesecake filling.
- Mix Filling Ingredients: Add the granulated sugar, egg, and vanilla extract to the cream cheese and continue beating until the mixture is creamy and fully combined.
- Spread Filling: Evenly spread the cheesecake mixture over the cookie dough base in the pan, smoothing it out.
- Add Topping: Break the remaining cookie dough into small pieces and scatter them evenly over the cheesecake layer. Optionally, sprinkle extra colorful sprinkles on top for a festive look.
- Bake: Place the pan in the preheated oven and bake for about 35 minutes or until the cheesecake is set and the cookie topping turns slightly golden.
