Confetti Cheesecake Bars Recipe

  • Author: Lana
  • Total Time: 45 minutes
  • Yield: 9 servings 1x

Description

These Confetti Cheesecake Bars combine the festive fun of confetti cookie dough with a creamy cheesecake layer, creating a delightful dessert perfect for celebrations or any time you want a colorful sweet treat. The cookie dough forms a crispy base and topping, sandwiching a rich, fluffy cheesecake filling studded with sprinkles for added texture and color.

Ingredients

Scale

Cookie Dough Base and Topping

  • 1618 oz Confetti Cookie Dough (or regular cookie dough with your own sprinkles added)
  • Extra sprinkles (optional)
  • Baking spray (for greasing the pan)

Cheesecake Filling

  • 8 oz cream cheese, room temperature
  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • ½ tsp pure vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×9 inch square baking pan with baking spray and line it with parchment paper to ensure easy removal of the bars after baking.
  2. Form the Crust: Take about 8 portions of the cookie dough, or approximately two-thirds of the total dough, and press it evenly into the bottom of the prepared pan to create a firm cookie base.
  3. Beat Cream Cheese: Using a stand mixer or hand mixer, beat the softened cream cheese until it becomes light and fluffy, which helps create a smooth cheesecake filling.
  4. Mix Filling Ingredients: Add the granulated sugar, egg, and vanilla extract to the cream cheese and continue beating until the mixture is creamy and fully combined.
  5. Spread Filling: Evenly spread the cheesecake mixture over the cookie dough base in the pan, smoothing it out.
  6. Add Topping: Break the remaining cookie dough into small pieces and scatter them evenly over the cheesecake layer. Optionally, sprinkle extra colorful sprinkles on top for a festive look.
  7. Bake: Place the pan in the preheated oven and bake for about 35 minutes or until the cheesecake is set and the cookie topping turns slightly golden.
  8. Cool and Slice: Remove the bars from the oven and let them cool completely in the pan before lifting them out using the parchment paper. Slice into bars and serve.

Notes

  • Make sure the cream cheese and egg are at room temperature for a smoother filling.
  • Use parchment paper to avoid sticking and make removal easier.
  • You can customize the cookie dough by adding your own sprinkles if you don’t have confetti cookie dough.
  • If you prefer a firmer crust, chill the cookie dough base for 10-15 minutes before adding the cheesecake layer.
  • Store bars in an airtight container in the refrigerator for up to 4 days.
  • Bring to room temperature before serving for the best flavor and texture.
