Cowboy Butter (divided)

  • 1 recipe cowboy butter, divided (typically a blend of butter, garlic, lemon juice, Worcestershire sauce, spices, and fresh herbs)

Instructions

  1. Heat oil and cook steak: Heat the olive oil in a medium skillet over medium-high heat until hot and shimmering. Add steak bites in a single layer, working in batches if necessary, and sear without moving for 1½ to 2 minutes.
  2. Flip and finish cooking: Flip the steak bites and cook for another 1 to 2 minutes, or until steak reaches your desired doneness.
  3. Reduce heat and add cowboy butter: Lower heat to medium. Add half of the cowboy butter directly to the skillet with the steak bites and toss to coat evenly.
  4. Glaze steak with butter: Cook the steak bites for an additional 1 minute until the cowboy butter melts and the steak is well glazed.
  5. Melt remaining butter for serving: Melt the remaining cowboy butter in the microwave and serve it on the side for dipping or drizzling over the steak bites.
