Vegetables & Sauce

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or penne pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside while you prepare the rest of the dish.
  2. Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Season the sliced chicken breasts with Cajun seasoning, salt, and pepper. Add the chicken strips to the skillet and cook for 5 to 7 minutes, or until the chicken is fully cooked and no longer pink inside. Remove the chicken from the skillet and set it aside.
  3. Prepare the Sauce: In the same skillet, add the chopped onion and green bell pepper. Sauté for about 3 to 4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer. Stir in the grated Parmesan cheese and diced tomatoes. Allow the sauce to simmer gently for about 5 minutes until it thickens slightly.
  4. Combine Pasta and Chicken: Return the cooked chicken to the skillet with the sauce. Toss in the cooked pasta and stir everything together until the pasta and chicken are well coated in the creamy Cajun sauce. Taste and adjust seasoning with more Cajun seasoning, salt, or pepper if necessary.
