Ingredients
Tofu Base
- 1 block Firm Tofu (Pressed)
Marinade
- 2 tablespoons Olive Oil (Can substitute with avocado oil)
- 3 tablespoons Water
- 3 tablespoons Lemon Juice (Freshly squeezed)
- 1 tablespoon Red Wine Vinegar (Can substitute with apple cider vinegar)
- 3 tablespoons Nutritional Yeast
- 1 teaspoon Garlic Powder (Or fresh garlic for stronger flavor)
- 1 teaspoon Onion Powder
- 1 teaspoon Basil (Fresh or dried)
- 1 teaspoon Oregano (Fresh or dried)
- 1 teaspoon Salt (Adjust to taste)
Instructions
- Press the tofu: Remove excess moisture from the firm tofu by placing it in a tofu press or wrapping it in a clean towel and setting weights on top. Let it press for 30 minutes to ensure the best texture for your vegan feta.
- Cut the tofu: After pressing, slice the tofu into cubes about ½ to 1 inch in size for easy marinating and serving.
- Prepare the marinade: In a separate bowl, whisk together olive oil, water, freshly squeezed lemon juice, red wine vinegar, nutritional yeast, garlic powder, onion powder, basil, oregano, and salt until well combined.
- Marinate the tofu: Place the cubed tofu into a shallow container and pour the marinade over it. Make sure all the tofu pieces are well coated with the mixture to absorb maximum flavor.
- Refrigerate and infuse flavors: Cover the container and refrigerate for at least 1 hour to allow the tofu cubes to soak up the marinade and develop a rich, tangy vegan feta flavor.
- Serve and enjoy: Use your vegan feta as a flavorful addition to salads, toasted bread, or as part of a vegan charcuterie board. It’s perfect for enhancing any dish that calls for traditional feta cheese.
Notes
- Pressing the tofu thoroughly is essential for achieving the right texture and allowing the marinade to permeate the cubes effectively.
- You can adjust the salt and herbs to suit your personal taste preferences.
- For stronger garlic flavor, substitute garlic powder with freshly minced garlic.
- Store leftover vegan feta in an airtight container in the refrigerator for up to 5 days.
- Feel free to experiment by adding smoked paprika or chili flakes for a different flavor twist.
