Creamy Maple Pudding Recipe

  • Author: Lana
  • Total Time: 30 minutes
  • Yield: 6 servings 1x

Description

Maple Pudding is a rich, creamy, and comforting dessert that highlights the delightful flavor of pure maple syrup. This versatile pudding can be served warm or chilled and offers a smooth texture with a natural sweetness perfect for any occasion.

Ingredients

Scale

Ingredients

  • 2 cups whole milk
  • 1/2 cup pure maple syrup
  • 1/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter (optional, for added richness)

Instructions

  1. Prepare the Mixture: In a medium saucepan, whisk together the cornstarch, granulated sugar, and salt. Gradually add the whole milk to this mixture while whisking continuously until smooth and fully combined.
  2. Cook the Pudding: Place the saucepan over medium heat and cook, stirring constantly, until the mixture starts to thicken and comes to a gentle boil, approximately 5 to 7 minutes. In a separate bowl, lightly beat the egg yolks.
  3. Temper the Egg Yolks: Slowly ladle a small amount of the hot pudding mixture into the beaten egg yolks, whisking continuously to avoid curdling. Repeat this a couple of times to gradually raise the temperature of the yolks.
  4. Combine Mixtures: Pour the tempered egg yolk mixture back into the saucepan with the remaining pudding mixture, whisking to fully combine all ingredients.
  5. Add Flavorings: Stir in the pure maple syrup and continue to cook for another 2 to 3 minutes while stirring until the pudding is thick and creamy. Remove the pan from heat and stir in the vanilla extract and unsalted butter (if using) until completely incorporated.
  6. Serve: Pour the finished pudding into individual serving dishes or a large bowl. Allow it to cool to room temperature, then refrigerate for at least 2 hours until set. Serve chilled or at room temperature, optionally garnished with whipped cream or additional maple syrup.

Notes

  • Add a pinch of cinnamon or nutmeg for a warm, spiced variation.
  • For a dairy-free version, substitute whole milk with almond milk or coconut milk.
  • Enhance texture and flavor by stirring in chopped nuts or dried fruit before chilling.
  • Be sure to whisk constantly during cooking to prevent lumps and sticking.
  • Egg yolk tempering is critical to avoid curdling and to ensure smooth pudding texture.
  • Maple syrup provides natural sweetness; adjust quantity to taste if desired.
