Ingredients
Scale
Filling
- 8 ounces cream cheese, softened
- 1 cup light brown sugar, packed
- 2 large eggs + 1 egg yolk
- 1 1/4 cups heavy cream
- 1/4 cup all-purpose flour
- 3 1/2 tablespoons ground cinnamon
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
Crust & Topping
- 1 pie crust, homemade or store-bought
- Powdered sugar for dusting
Instructions
- Prepare the Oven and Pie Crust: Preheat the oven to 350°F. Roll out the pie crust and fit it into a 9-inch pie dish. Crimp the edges to decorate and secure the crust. Place the crust in the refrigerator to chill while preparing the filling.
- Make the Filling: In the bowl of an electric mixer, beat the softened cream cheese and packed light brown sugar on high speed until the mixture is light and fluffy, about 3 to 5 minutes. Scrape down the sides of the bowl to ensure even mixing. Add the eggs and egg yolk, beating again until incorporated. Reduce the mixer speed to low and gradually mix in the heavy cream, all-purpose flour, ground cinnamon, vanilla extract, salt, and ground nutmeg until the filling is very smooth and well blended.
- Assemble and Bake: Pour the cinnamon-spiced filling into the chilled pie crust. Place the pie on the center oven rack and bake for 35 minutes. Check if the center is set by gently jiggling the pie; it should be mostly firm but with a slight wobble. If needed, bake for an additional 5 minutes. Remove the pie from the oven and allow it to cool completely at room temperature.
- Chill the Pie: Once cooled, cover the pie and refrigerate until fully chilled. This helps the filling to set and enhances the flavors.
- Serve: Remove the pie from the refrigerator about 1 hour before serving to allow it to come to a perfect temperature. Dust the top with powdered sugar. Optionally, serve each slice with whipped cream for added richness and presentation.
Notes
- Store the pie covered with plastic wrap or aluminum foil in the refrigerator for up to one week to maintain freshness.
