Ingredients
Scale
Chicken
- 1.5 lbs boneless, skinless chicken breasts (or thighs)
Gravy Mix
- 2 (.87 oz) packets low-sodium chicken gravy mix
- 1/4 cup dry whole milk powder
- 2 tablespoons cornstarch
- 1 1/2 tablespoons instant chicken bouillon granules
- 3/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly cracked black pepper
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 2 cups water
Instructions
- Prepare Crockpot: Lightly coat the inside of a 6+ quart crockpot insert with non-stick spray. Place the chicken breasts in the crockpot to form the base of the dish.
- Mix Dry Ingredients: In a medium-sized bowl, whisk together the chicken gravy packets, dry whole milk powder, cornstarch, instant chicken bouillon granules, garlic powder, onion powder, black pepper, dried basil, and dried thyme until well combined.
- Create Gravy Paste: Slowly pour in part of the 2 cups of water while continuously stirring to form a lump-free paste. Gradually whisk in the remaining water to create a smooth gravy mixture without lumps.
- Cook Chicken and Gravy: Pour the prepared gravy mix over the chicken in the crockpot. Cover and cook on low heat for 5 to 6 hours or on high heat for 3 to 4 hours, until the chicken is fully cooked and easily shredded.
- Shred and Serve: Use two forks to shred the chicken to your preferred size, keeping pieces larger or smaller as desired. Serve hot over rice, mashed potatoes, or egg noodles; this dish is also delicious with crackers for added texture.
Notes
- For best results, use boneless, skinless chicken breasts or thighs for tender meat.
- You can adjust the amount of black pepper to taste, adding more during serving if desired.
- This recipe works well with low-sodium gravy mix to control salt levels.
- Leftovers store well in the refrigerator for up to 3 days and reheat easily.
- Feel free to add vegetables such as carrots or peas for a more complete meal.
