Meat and Vegetables
- 1 lb ground turkey or beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup frozen corn
- 1 cup frozen mixed vegetables (peas, carrots, etc.)
Seasoning and Liquid
- 1 can (15 oz) coconut milk
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
Topping
- 32 oz frozen tater tots (gluten-free)
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) to prepare for baking the casserole.
- Cook the Meat: In a large skillet over medium heat, cook the ground turkey or beef until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
- Sauté Aromatics: Add the chopped onion and minced garlic to the skillet and sauté for 3-4 minutes until the onion becomes translucent and fragrant.
- Add Vegetables and Seasonings: Stir in the chopped red bell pepper, frozen corn, frozen mixed vegetables, coconut milk, dried thyme, paprika, salt, and pepper. Cook this mixture for 5-7 minutes until fully heated through and flavors are combined.
- Prepare the Baking Dish: Transfer the cooked meat and vegetable mixture into a 9×13 inch baking dish, spreading it evenly across the bottom.
- Top with Tater Tots: Arrange the frozen tater tots in a single, even layer on top of the meat and vegetable mixture.
- Bake the Casserole: Place the dish in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden brown and crispy on top.
- Cool and Serve: Remove the casserole from the oven and let it cool for a few minutes before serving to allow it to set slightly.
