Ingredients

Scale

For the Base:

  • 1 cup graham cracker crumbs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Filling:

  • 1 cup dark chocolate chips (or semi-sweet)
  • 1/2 cup sweetened condensed milk
  • 1/2 cup shelled pistachios, chopped
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the Topping:

  • 1/2 cup dark chocolate chips (for drizzling)
  • Extra chopped pistachios (for garnish)

Instructions

  1. Prepare the Base: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal. In a mixing bowl, combine graham cracker crumbs, cocoa powder, melted butter, and granulated sugar. Mix thoroughly until well combined. Press this mixture evenly into the bottom of the prepared baking pan to form the base. Bake for 10 minutes, then remove from the oven and let cool slightly.
  2. Prepare the Filling: Place a saucepan over low heat and combine dark chocolate chips and sweetened condensed milk. Stir continuously until the chocolate melts and the mixture becomes smooth. Remove from heat and immediately stir in chopped pistachios, salt, and vanilla extract until fully incorporated.
  3. Assemble the Bars: Pour the chocolate-pistachio filling over the cooled graham cracker base, spreading it evenly. Return the baking pan to the oven and bake for an additional 10 minutes, or until the filling is set.
  4. Cool and Drizzle: After baking, remove the bars from the oven and allow them to cool in the pan for about 30 minutes. Then, transfer the pan to the refrigerator and chill the bars for at least 1 hour. Meanwhile, melt the remaining dark chocolate chips in a microwave-safe bowl using 30-second intervals, stirring between each until smooth. Drizzle the melted chocolate over the cooled bars and sprinkle with extra chopped pistachios.
  5. Slice and Serve: Once the chocolate drizzle has set, use the parchment paper overhang to lift the bars out of the pan. Cut into squares or rectangles as desired. Serve and enjoy your delicious Dubai Chocolate Pistachio Bars.

Notes

  • Use parchment paper with overhang to easily lift the bars out of the pan for clean slicing.
  • Ensure the filling is set before chilling by baking it properly to avoid a soft center.
  • For a nut-free version, substitute pistachios with chopped roasted seeds or omit entirely.
  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • Allow bars to come to room temperature for 10-15 minutes before serving for optimal texture.
