Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish with the melted coconut oil to prevent sticking.
  2. Prepare the Batter: In a large mixing bowl, combine rolled oats, protein powder, baking powder, cinnamon, and salt. In a separate bowl, whisk together applesauce, almond milk, honey, and vanilla extract until smooth. Pour the wet ingredients into the dry mixture and stir until just combined, being careful not to overmix.
  3. Create the Cinnamon Swirl: In a small bowl, mix together brown sugar and the additional cinnamon to form the cinnamon swirl mixture.
  4. Assemble the Cake: Pour half of the batter into the prepared baking dish and evenly sprinkle half of the cinnamon sugar mixture over it.
