Instructions

  1. Combine Ingredients: In a medium saucepan, stir together the blueberries, granulated sugar, lemon zest, lemon juice, and a pinch of salt over medium heat. Make sure all ingredients are well combined.
  2. Bring to Boil: Stirring frequently, bring the mixture to a boil over medium heat to start dissolving the sugar and breaking down the blueberries to release their juices.
  3. Simmer and Thicken: Reduce the heat to medium and simmer the mixture, stirring occasionally and gently crushing some of the blueberries with the back of a spoon. Continue for 7 to 10 minutes until the jam slightly thickens and reaches 220°F on a digital thermometer, indicating it is ready.
  4. Cool the Jam: Remove the saucepan from heat and let the jam cool for 5 minutes before transferring it into clean jars. Leave the jars unopened and allow the jam to come to room temperature.
  5. Seal and Store: Once the jam is at room temperature, seal the jars tightly. Store the jam in the refrigerator where it will continue to set for 24 to 48 hours but can be enjoyed immediately if desired.
