- Prepare Strawberry Puree: Clean and slice the strawberries, then place them in a blender or food processor with the granulated sugar. Puree the mixture until smooth. Reserve ½ cup of the puree separately and set aside for layering later.
- Whip the Cream: In a cold bowl, beat the heavy cream until stiff peaks form, ensuring the cream is cold to achieve the best volume and texture.
- Combine Puree and Cream: Gently fold the remaining strawberry puree (the portion not set aside) into the whipped cream, being careful not to deflate the mixture to keep it light and airy.
- Assemble the Mousse: Divide the reserved ½ cup of strawberry puree evenly among 4 small to medium glasses (approximately 1 cup volume each). Top each portion of puree with the strawberry mousse mixture. Refrigerate the glasses for at least 1 hour or overnight if preferred to allow the mousse to set and flavors to meld.
- Serve: Before serving, garnish each glass with fresh sliced strawberries. Serve chilled and enjoy this fresh and airy dessert.
