  • 16 oz roll breakfast sausage (hot)
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • Salt to taste
  • Pepper to taste

  • 8 large eggs, whisked
  • 1 cup shredded cheddar cheese

Wraps

  • 8 burrito-sized flour tortillas

Instructions

  1. Cook the sausage and veggies: Heat a large non-stick sauté pan over medium heat. Add the sausage, diced onion, and diced bell peppers once the pan is hot. Cook while breaking up the sausage until the meat is no longer pink and the peppers are tender. Season with salt and pepper to taste, then remove from the pan and transfer to a large bowl.
  2. Scramble the eggs: In the same pan, pour in the whisked eggs and cook until scrambled to your preferred consistency. Season with salt and pepper. Add the cooked eggs to the bowl with the sausage and vegetable mixture and stir together until well combined.
  3. Assemble the burritos: Lay out each tortilla and scoop about 3/4 cup of the meat and egg mixture onto the center. Sprinkle 2 tablespoons of shredded cheddar cheese on top, then roll the tortilla tightly to form a burrito. Repeat for all tortillas and filling.
  4. Bake or store: You can bake the burritos immediately at 425°F (220°C) on a baking sheet for about 10 minutes until heated through and cheese is melted, or wrap and store them for later use.
  5. Reheating instructions: When stored in the freezer, reheat by baking until warmed through. This maintains crispness and melty cheese.
