Soup Ingredients
- 30 ounces canned tomato sauce
- 3 cups vegetable broth (or chicken broth)
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ cup heavy cream
- Salt and pepper to taste
Instructions
- Heat the base: Set a 4 quart sauce pot over medium-high heat. Pour the canned tomato sauce, vegetable broth, onion powder, and garlic powder into the pot. Stir well to combine all ingredients evenly.
- Simmer to thicken: Bring the soup to a boil, then reduce the heat and let it simmer gently for 10-15 minutes. Stir occasionally to prevent sticking and to help the soup reduce and thicken slightly.
- Finish and season: Turn off the heat and stir in the heavy cream until fully incorporated. Taste the soup, then season with salt and pepper as needed. For an extra creamy texture, add an additional splash of heavy cream. Serve the soup warm.
Notes
- You can substitute chicken broth for vegetable broth if you prefer a non-vegetarian version.
- For a smoother soup, blend the soup with an immersion blender before adding the cream.
- Adding fresh basil or oregano can enhance the flavor.
- This soup can be refrigerated for up to 3 days or frozen for up to 2 months.
