  • 3/4 cup (145g) packed brown sugar (or coconut sugar or granulated sugar)
  • 3 teaspoons baking powder

  • 1/8 teaspoon salt (optional)

Wet Ingredients

  • 1 cup (250g) dairy-free milk
  • 1/2 cup (125g) neutral flavored oil
  • 1 tablespoon apple cider vinegar (optional)
  • 1 teaspoon vanilla extract (optional)

Fruits & Toppings

  • 1 (~180g) medium-sized apple, chopped roughly or finely
  • 1/2 (~90g) medium-sized apple, chopped roughly or finely (for topping)
  • 2 tablespoons raw demerara sugar

Instructions

  1. Preheat Oven and Prepare Tray: Preheat your oven to 180°C (350°F). Line a muffin or cupcake tray with paper liners to prevent sticking and make cleanup easier.
  2. Mix Dry Ingredients: In a medium or large bowl, combine the flour, brown sugar, baking powder, cinnamon, and salt. Stir well to ensure all dry ingredients are evenly distributed.
  3. Add Wet Ingredients: Pour in the dairy-free milk, neutral oil, apple cider vinegar, and vanilla extract if using. Mix gently just until the batter is almost combined; do not overmix to keep muffins tender.
  4. Fold in Apples: Add the chopped apple to the batter and fold it in carefully so the fruit is evenly dispersed without breaking down too much.
  5. Fill Muffin Tin: Use an ice cream scoop or large spoon to divide the batter evenly among the prepared muffin cups.
  6. Add Toppings (Optional): Scatter the remaining chopped apple pieces and raw demerara sugar on top of each muffin for a crunchy, sweet finish.
