For the Marinade and Tofu
- 1 block Super Firm Tofu (vacuum-sealed for best results)
- 1/2 cup Vegan Yogurt (Unsweetened) (or cashew cream/coconut yogurt)
- 2 tablespoons Dijon Mustard (or any mustard)
- 2 tablespoons Agave (or Sugar, Syrup) (or maple syrup/brown sugar)
- 2 tablespoons Lemon Juice & Zest (or lime juice)
- 3 tablespoons Olive Oil (or Neutral Flavored Oil) (like avocado oil)
- 3 tablespoons Soy Sauce (or tamari for gluten-free)
- 2 cloves Minced Garlic (or garlic powder)
- 2 tablespoons Nutritional Yeast (or vegan parmesan)
- 1 teaspoon Smoked Paprika
- 1 teaspoon Onion Powder
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- Salt and Pepper to taste

- 4 slices Pita Bread (whole wheat or gluten-free options)
- 1 cup Vegan Tzatziki
Instructions
- Prepare the Marinade: In a mixing bowl, whisk together the vegan yogurt, Dijon mustard, agave, lemon zest and juice, olive oil, soy sauce, minced garlic, nutritional yeast, smoked paprika, onion powder, oregano, thyme, salt, and pepper until smooth. Set aside 2 tablespoons of this marinade for later use.
- Prepare the Tofu: Gently pat the super firm tofu dry using paper towels to remove excess moisture. Cut the tofu into bite-sized chunks to ensure even cooking and marination.
- Marinate the Tofu: Toss the tofu pieces in the marinade bowl, ensuring all pieces are well coated. Allow the tofu to soak up the flavors for at least 15 minutes to maximize taste.
- Skewer and Cook the Tofu: If using skewers, carefully thread the marinated tofu pieces onto them. Heat a skillet over medium heat and add a small amount of olive oil. Cook the tofu for about 3 minutes on each side or until golden brown and crispy.
- Toss with Reserved Marinade: Once the tofu is browned and cooked through, toss the tofu pieces with the reserved 2 tablespoons of marinade to enhance flavor and moisture.
- Serve: Warm the pita bread and serve the tofu souvlaki on top. Add a generous dollop of vegan tzatziki on or alongside the pita for a creamy and refreshing contrast.
