Ingredients

Scale

Dough Ingredients

  • 4 1/2 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • 3 1/2 cups + 1 tablespoon all-purpose flour
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup whole or 2% milk, warmed to 110°F
  • 1 large egg, room temperature
  • 1 beaten egg, for brushing the tops

Garlic Butter Topping

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt, for finishing

Instructions

  1. Prepare Baking Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan, then set it aside to prevent sticking.
  2. Make Garlic Butter for Dough: In a small pot, melt the 4 1/2 tablespoons of butter and add the minced garlic. Cook for 1-2 minutes until fragrant. Remove from heat and let it cool while you prepare other ingredients.
  3. Combine Dough Ingredients: In a stand mixer bowl, combine the flour, chopped parsley, sugar, yeast, and sea salt. Add the warmed milk, room temperature egg, and the cooled garlic butter mixture. Using the dough hook, knead on low speed until dough is smooth, soft, and tacky, approximately 10-12 minutes. If dough is sticky, add flour 1 tablespoon at a time until workable.
  4. Shape Rolls: Divide the dough into 12 equal portions, about 67 grams each. Shape each portion into a smooth ball by pinching the seam at the bottom to seal. Place the rolls evenly in the prepared pan.
  5. First Rise: Cover the pan with plastic wrap or a clean kitchen towel and set in a warm place for 1-2 hours, or until the dough has doubled in size.
  6. Preheat Oven: Preheat your oven to 350°F (180°C) while the dough rises.
  7. Apply Egg Wash: Brush the tops of the risen rolls with the beaten egg to ensure a golden, shiny crust.
  8. Bake Rolls: Bake for 20-30 minutes, until the rolls turn golden brown on top and sound hollow when tapped.
  9. Prepare Garlic Butter Topping: While rolls bake, melt 2 tablespoons butter in a pot, add minced garlic, and cook for 1-2 minutes until fragrant. Remove from heat and stir in chopped parsley.
  10. Finish and Serve: Once rolls are out of the oven, immediately brush them generously with the garlic butter mixture. Sprinkle flaky sea salt on top if desired. Serve warm and enjoy!

Notes

  • Measure flour by spooning it into your measuring cup and leveling it off to avoid packing too much flour, which can make rolls dense.
  • If dough feels too sticky to handle after kneading, add one tablespoon of flour at a time until it becomes workable.
  • Using room temperature eggs and warm milk helps activate the yeast properly.
  • For best results, allow rolls to fully cool slightly before storing to prevent sogginess.
  • These rolls freeze well. Thaw and warm before serving.
