Instructions
- Prep: Gather all your ingredients. Cut the Yukon gold potatoes and sirloin steak into ½ inch cubes. Mince the garlic cloves and have your herbs and seasonings ready.
- Heat the skillet: Place a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of ghee to the pan and allow the ghee to melt completely.
- Cook the potatoes: Once the ghee is melted, add the cubed potatoes to the skillet. - Sear the steak: Increase the skillet heat to medium-high. Add the remaining two tablespoons of ghee to the pan and let it melt. Add the steak cubes and season lightly with salt and pepper. Let the steak sear without stirring for at least 2 minutes to develop a caramelized crust. Then stir and cook until the steak pieces are golden brown all over, about 1-2 minutes more.
- Combine and finish: Return the cooked potatoes to the skillet with the steak. Stir gently to combine the steak and potatoes evenly. Adjust seasoning with additional salt and pepper to your taste. Remove from heat, garnish with freshly chopped parsley, and serve immediately while hot.
