Instructions

  1. Shred Chicken: Shred or chop the two rotisserie chicken breasts into bite-sized pieces and set aside for later.
  2. Cook Bacon: In a large skillet over medium-high heat, cook the bacon pieces until they are crispy. Remove the bacon from the pan and drain on paper towels, reserving the bacon fat in the skillet.
  3. Fry Potatoes: Add the quartered red potatoes to the skillet with the bacon fat and fry them until they are golden brown and crispy on all sides. Season the potatoes with a pinch of black pepper. Once crispy, set the potatoes aside with the cooked bacon.

Then pour in the apple cider vinegar and chicken stock, scraping the bottom of the pan to loosen any stuck bits. Continue stirring until the sauce thickens.
