Ingredients
Scale
Brownie Batter
- 1½ cups Blueberries, fresh or frozen (thawed)
- 10 tablespoons Unsalted butter, melted
- 1¼ cups Granulated sugar
- 2 large Eggs, room temperature
- ½ teaspoon Vanilla extract
- ½ teaspoon Sea salt
- 1 cup All-purpose flour, sifted
Glaze
- 1 cup Powdered sugar, sifted
- 2 tablespoons Milk
- ⅛ teaspoon Vanilla extract
- Pinch of salt
Instructions
- Prepare Blueberry Puree: Blend 1½ cups of fresh or thawed blueberries until completely smooth to create a vibrant blueberry puree.
- Cook the Puree: Pour the blueberry puree into a saucepan set over medium-low heat. Simmer gently, stirring constantly, until it reduces down to about half a cup, intensifying the flavor. Remove from heat and allow to cool completely.
- Prep the Baking Dish: Preheat your oven to 325°F (163°C). Line an 8×8-inch glass baking dish with parchment paper for easy removal and set it aside.
- Mix Wet Ingredients: In a medium bowl, combine melted unsalted butter and granulated sugar. Stir in the eggs, vanilla extract, and sea salt until the mixture is smooth and uniform in color.
- Fold in Blueberry Reduction: Once cooled, fold the reduced blueberry puree into the wet mixture until evenly incorporated.
- Combine Dry Ingredients: Gradually add the sifted all-purpose flour to the wet mixture, folding gently until just combined. Avoid overmixing to keep brownies tender.
- Bake: Pour the batter into the prepared baking dish, spreading it evenly. Bake on the middle rack for 35 to 40 minutes, checking at 30 minutes; the brownies are done when the center is set and a toothpick inserted comes out clean or with a few moist crumbs.
- Make and Apply Glaze: Mix powdered sugar, milk, vanilla extract, and a pinch of salt until smooth and silky. Once the brownies have completely cooled, spread half of the glaze evenly over the top. Allow it to harden before spreading on the remaining glaze and letting it set fully.
- Cut and Store: Cut the glazed brownies into 16 equal squares. Store leftovers in an airtight container to maintain freshness.
Notes
- Use fresh or thawed frozen blueberries for the best results.
- Do not overbake to keep the brownies chewy and moist.
- Allow the glaze to harden between layers for a cleaner finish.
- For a dairy-free option, substitute butter with a vegan alternative and use plant-based milk in the glaze.
- Ensure eggs are at room temperature for better mixing and texture.
- Sifting the flour and powdered sugar helps avoid lumps and ensures smooth batter and glaze.
