Pizza Base

Instructions
- Roast Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with 1 tablespoon of olive oil, wrap tightly in aluminum foil, and roast for 30-35 minutes until soft and caramelized. Let cool slightly, then squeeze the roasted garlic cloves out into a bowl.
- Sauté Spinach: Heat remaining 1 tablespoon olive oil in a skillet over medium heat. Add chopped spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper, then remove from heat and set aside.
- Prepare Cheese Mixture: Mash the roasted garlic in the bowl until smooth. Add ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix everything until well combined.
- Assemble Pizza: Spread the garlic-ricotta mixture evenly over the pizza crust. Top with sautéed spinach, then sprinkle the remaining mozzarella cheese followed by the crumbled feta cheese. Add crushed red pepper flakes if you prefer a spicy kick.
