  • Author: Lana
  • Total Time: 22 minutes
  • Yield: 4 servings 1x

Description

This Grilled Chicken Bacon Melt is a flavorful and satisfying meal featuring tender grilled chicken breasts topped with crispy bacon, spicy jalapeno slices, and melty Southwest cheese. Perfect for a quick and delicious summer dinner, this recipe combines the smoky taste of the grill with comforting melted cheese and a touch of heat from jalapenos.

Ingredients

Scale

Chicken

  • 4 chicken breasts (or chicken cutlets)
  • 1 teaspoon seasoned salt
  • 2 tablespoons olive oil

Toppings

  • 8 slices bacon, cooked and halved
  • 4 Sargento® Blends™ 4 Cheese Southwest Slices
  • 1 jalapeno, thinly sliced (optional)

Instructions

  1. Preheat the grill: Set your grill to medium-high heat to ensure it’s hot enough to sear the chicken and cook it thoroughly.
  2. Prepare the chicken: Sprinkle seasoned salt evenly over both sides of the chicken breasts, then drizzle with olive oil to keep the meat moist and help with grilling.
  3. Grill the chicken: Place the chicken breasts on the grill and cook for 5 minutes on each side or until the internal temperature reaches 165°F, ensuring the chicken is safely cooked yet juicy.
  4. Add bacon and jalapenos: Once grilled, turn off the heat. Top each chicken breast with 1-2 pieces of cooked bacon and 2-3 slices of jalapeno for a spicy kick.
  5. Melt the cheese: Place a slice of the Southwest cheese on top of each chicken piece. Close the grill lid and let the cheese melt for 2-3 minutes to create a gooey, flavorful topping.
  6. Serve: Remove the chicken from the grill carefully and serve immediately to enjoy the melty, savory combination at its best.

Notes

  • You can omit jalapenos for a milder version.
  • Ensure bacon is fully cooked before adding to the chicken to avoid undercooked meat.
  • Use a meat thermometer to check the chicken’s internal temperature for safety.
  • This recipe works well with chicken cutlets for quicker cooking.
  • Leftover grilled chicken melts can be stored refrigerated and reheated gently.
