Ingredients
Scale
Dry Ingredients
- ¼ cup chocolate protein powder (plant-based or whey)
- ¼ cup unsweetened cocoa powder
- ¼ cup almond flour (or oat flour as an alternative)
- ½ tsp baking powder
- A small pinch of salt
Wet Ingredients
- 1 egg
- 2 tbsp plain Greek yogurt (non-fat or regular)
- 1 tbsp maple syrup (or honey)
- 2 tbsp almond milk
Optional
- 1 tbsp mini chocolate chips (optional but delicious)
Instructions
- Heat Oven: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tray or line it with mini muffin liners to prevent sticking.
- Combine Wet Ingredients: In a mixing bowl, whisk together the egg, Greek yogurt, almond milk, and maple syrup until the texture is smooth and creamy, ensuring the ingredients are well incorporated.
- Add the Dry Mix: Add the chocolate protein powder, unsweetened cocoa powder, almond flour, baking powder, and a pinch of salt to the wet mixture. Stir gently until everything is just combined and a thick brownie batter forms; do not overmix.
- Optional Add-Ins: Fold in the mini chocolate chips to add bursts of melty chocolate in each bite, if desired.
- Fill the Pan: Spoon the batter evenly into 8 to 10 mini muffin wells, filling each about three-quarters full to allow room for rising.
- Bake: Bake in the preheated oven for 10 to 12 minutes. To check doneness, insert a toothpick into the center of a brownie bite; it should come out with just a few moist crumbs attached.
- Cool: Let the brownie bites rest in the pan for 5 minutes to firm up slightly, then transfer them to a wire rack to cool completely before serving.
Notes
- You can substitute almond flour with oat flour for a different texture or if you have nut allergies.
- Use plant-based or whey protein powder according to dietary preference.
- If you prefer sweeter bites, increase maple syrup to 1.5 tbsp.
- Store brownie bites in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For a vegan version, substitute the egg with a flax egg and use a plant-based yogurt.
