  • 1 tbsp almond milk (or water)
  • 1 tbsp butter-flavored coconut oil, melted

For Decoration:

  • ¾ cup white chocolate chips (for coating)
  • Optional: 1 tsp coconut oil (for thinning chocolate)

Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together vanilla protein powder, coconut flour, optional baking soda, and confetti sprinkles until well combined.
  2. Add Wet Ingredients: Stir in the applesauce, almond milk (or water), and melted butter-flavored coconut oil until a cohesive dough forms.
  3. Adjust Consistency: If the mixture is too soft, gradually add more coconut flour, 1 teaspoon at a time. If too dry, add more almond milk or water, 1 teaspoon at a time, to reach a dough-like consistency.
  4. Chill the Dough: Shape the dough into a rectangular mound, then wrap it in plastic wrap or place in an airtight container. Chill in the refrigerator for at least 30 minutes to firm up.
  5. Slice into Bars: Once the dough is firm, remove and slice into 5 equal-sized bars.
  6. Melt Chocolate Coating: Melt the white chocolate chips in the microwave in 20-second intervals, stirring well between each interval. Optionally, add 1 teaspoon coconut oil for a thinner, smoother coating.
  7. Coat the Bars: Dip each bar into the melted white chocolate or drizzle the chocolate over the bars, then place them on parchment paper.
  8. Set the Chocolate: Allow the chocolate coating to set completely at room temperature or in the fridge before serving.

Notes

  • Use almond milk as a dairy-free substitute but water works as well.
