Instructions

  1. Sauté vegetables: Preheat your oven to 400°F (200°C). In a saucepan, heat the olive oil over medium-high heat. Add the diced onion, red bell pepper, and jalapeño and sauté until the vegetables become tender and slightly translucent, about 5-7 minutes.
  2. Combine ingredients: In a large bowl, mix the sautéed vegetables with the drained corn, softened cream cheese, sour cream, 1 cup of shredded Colby Jack cheese, chili powder, garlic powder, paprika, salt, and pepper. Stir well until the mixture is creamy and the ingredients are evenly distributed.
  3. Bake the dip: Spread the mixture evenly into a 2-quart casserole dish or a small oven-safe skillet. Sprinkle the remaining 1 cup of shredded Colby Jack cheese evenly on top. Place the dish in the preheated oven and bake for 15-20 minutes, or until the dip is hot, bubbly, and the cheese is melted and golden brown.
  4. Serve warm: Remove the dip from the oven and garnish with sliced green onions. Serve immediately with tortilla chips or crackers for dipping.
