Kadayif Pudding Recipe

  • Author: Lana
  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Description

Kadayif pudding is a delightful Turkish dessert featuring a creamy vanilla pudding layered with crispy, buttery shredded kadayıf. This comforting treat combines the rich flavors of smooth pudding with the crunchy texture of caramelized kadayıf for a perfect balance of taste and mouthfeel. Ideal for a special occasion or a cozy family dessert, it takes about 35 minutes to prepare and serves six people.

Ingredients

Scale

For the Pudding

  • 1 liter milk
  • 2 ½ tablespoons flour
  • 2 tablespoons starch
  • 2 eggs
  • 1 packet vanilla sugar (about 8 grams)
  • 200 ml cream (35% fat)

For the Kadayıf

  • 180 grams shredded kadayıf
  • 110 grams butter
  • 4 tablespoons sugar

Instructions

  1. Prepare the Pudding: In a cold pot, mix together the milk, eggs, flour, and starch until smooth. Place the pot over medium heat and stir constantly to prevent lumps. Continue stirring until the mixture thickens to a pudding-like consistency. Remove from heat and stir in the vanilla sugar and cream thoroughly until smooth and creamy.
  2. Prepare the Kadayıf: In a separate pan, melt the butter over medium heat. Add the sugar and stir until it fully dissolves. Then add the shredded kadayıf, gently frying it while stirring frequently until the kadayıf turns golden brown and crispy, being careful not to burn it.
  3. Assemble the Dessert: For serving, layer the dessert in individual cups or a large serving bowl. Begin with a layer of the crispy kadayıf on the bottom, followed by a generous layer of the creamy pudding. Top with another layer of crispy kadayıf to finish. Serve warm or chilled based on your preference.

Notes

  • Stir the pudding constantly during cooking to avoid lumps and ensure a smooth texture.
  • Be careful when frying the kadayıf; keep the heat moderate to prevent burning.
  • You can serve the pudding warm or chilled, depending on preference.
  • For added flavor, sprinkle some ground pistachios or cinnamon on top before serving.
  • This dessert can be garnished with a drizzle of syrup or honey if you prefer extra sweetness.
