Crust Ingredients
- 1 ½ cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1/3 cup granulated erythritol or preferred keto sweetener
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Topping Ingredients
- 1 ½ cups pecans, roughly chopped
- 1/2 cup sugar-free maple syrup or keto-friendly syrup
- 2 tablespoons heavy cream
- Pinch of salt
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper for easy removal.
- Mix Dry Crust Ingredients: In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, and salt. Mix well to ensure there are no clumps.
- Add Wet Ingredients to Dry: Add the melted butter, egg, and vanilla extract to the dry ingredients. Stir until the mixture is thoroughly combined and forms a dough.
- Form Crust: Press the dough evenly into the bottom of the prepared baking pan to create the crust layer. Use the back of a spatula or your hands for an even base.
- Bake Crust: Bake the crust in the preheated oven for 12-15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.
- Prepare Pecan Topping: In a separate bowl, combine the chopped pecans, sugar-free maple syrup, heavy cream, and a pinch of salt. Mix until the pecans are evenly coated.
- Add Topping to Crust: Pour the pecan mixture over the cooled crust, spreading it evenly.
- Bake with Topping: Return the pan to the oven and bake for an additional 15-20 minutes, or until the pecans are lightly toasted and the topping is set.
- Cool Completely: Once baked, remove from the oven and let it cool in the pan for at least 30 minutes before cutting into squares.
- Chill Before Serving: For best results, chill the squares in the refrigerator before serving to help them hold their shape. Enjoy your keto pecan squares!
