Scale
Main Ingredients
- 8 ounces frozen spinach, cooked and well drained
- 16 ounces sour cream
- 1 cup mayonnaise
- 1.8 ounce packet Knorr Vegetable Mix
- 8 ounces water chestnuts, drained and chopped (optional)
- 2 to 4 green onions, sliced thin
- Pinch of salt and pepper
For Serving
- Sourdough or bread bowl (optional)
Instructions
- Cook and drain spinach: Cook 8 ounces of frozen spinach on the stove according to package directions. Once cooked, allow it to cool and then squeeze out as much moisture as possible using a cheesecloth or paper towel to prevent the dip from becoming watery.
- Combine and chill: In a medium bowl, mix together 16 ounces of sour cream, 1 cup of mayonnaise, the entire 1.8-ounce packet of Knorr Vegetable Mix, 8 ounces of chopped water chestnuts, 2 to 4 sliced green onions, and the well-drained cooked spinach until smooth. Season with a pinch of salt and pepper to taste. Cover and refrigerate the mixture for at least 1 hour, preferably up to overnight, to allow the flavors to meld.
- Hollow out bread: When ready to serve, prepare the bread bowl by cutting a large circle along the top of the loaf and carefully hollowing out the inside to create a bowl-like container for the dip.
- Add sliced bread to platter for dipping: Slice the removed bread from the center into bite-sized pieces that guests can use to scoop up the dip.
- Place dip in bread bowl: Transfer the chilled spinach dip into the hollowed-out bread bowl and place it on the serving platter alongside the bread slices for dipping. Serve immediately and enjoy.
Notes
- Ensure the spinach is well drained to avoid excess moisture in the dip, which can make it watery.
- The water chestnuts add a pleasant crunch but can be omitted if desired.
- You can prepare the dip up to one day in advance — flavors improve after resting in the refrigerator.
- This dip is best served chilled and within a few hours of assembling in the bread bowl.
- If you want to keep it low calorie or reduce fat, consider substituting light sour cream and mayonnaise.
