Instructions
- Preheat and Prepare: Preheat your oven to 425°F (220°C). Line a muffin tin with baking cups and spray them lightly with coconut oil or cooking spray to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the gluten free flour, baking soda, baking powder, Vital Proteins Matcha Collagen (or matcha powder), and salt. Set this mixture aside.
- Combine Wet Ingredients: In a large bowl, mash the ripe bananas and add the softened coconut oil, dairy-free Greek yogurt, applesauce, and vanilla extract. Stir until the mixture is well combined.
