- 1 tablespoon fresh dill – chopped (or parsley)
- 1/4 teaspoon salt – to taste
Taco Assembly:
- 8 small soft flour tortillas (or corn tortillas for gluten-free option)
- 1 cup (150g) cherry tomatoes – halved
- 1/2 red onion – thinly sliced
- 1/2 cup (75g) crumbled feta cheese
- 2 cups (60g) fresh spinach or arugula
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the thinly sliced chicken breasts and toss until fully coated. Allow the chicken to marinate for at least 20 minutes or refrigerate overnight for deeper flavor.
- Make the Tzatziki: Grate the cucumber and squeeze out any excess water. In a separate bowl, combine the drained cucumber with Greek yogurt, minced garlic, lemon juice, chopped dill (or parsley), and salt. Mix well and chill in the refrigerator until ready to serve.
