Instructions

  1. Prepare the filling: In a bowl, combine the diced tomato, diced red onion, chopped spinach, crumbled feta cheese, and shredded mozzarella cheese thoroughly to create the quesadilla filling.
  2. Assemble the quesadillas: Lay each burrito style tortilla flat and place one-third of the filling on one half of each tortilla. Carefully fold the tortilla over to cover the filling, forming a half-moon shape.
  3. Cook the quesadillas: Heat a small amount of oil in a large flat pan or griddle over medium heat. Once hot, transfer the folded tortillas to the pan. Cook each quesadilla for 3 to 4 minutes per side, pressing gently with a spatula to ensure even browning and that the cheese inside melts completely.
  4. Serve: Remove the quesadillas from the pan and let them rest slightly before cutting each into 4 slices. Serve with your favorite toppings such as sour cream, salsa, or pico de gallo.
