Quesadilla Filling

Instructions
- Prepare the filling. In a mixing bowl, combine the shredded mozzarella cheese, crumbled feta cheese, chopped spinach, diced tomato, sliced red onion, and black pepper. Mix all ingredients well to evenly distribute flavors.
- Assemble the quesadillas. Lay one flour tortilla flat on a clean surface. Spoon about one-fourth of the filling mixture onto one half of the tortilla. Fold the other half over the filling to create a half-moon shape, pressing gently to seal.
- Heat the skillet. Place a non-stick skillet on the stove over medium heat and add the tablespoon of olive oil, allowing it to warm but not smoke.
- Cook the first side. Carefully place the filled tortilla into the heated skillet. Cook for 3 to 4 minutes, or until the underside turns golden brown and the cheese begins to melt.
- Flip and cook the other side. Using a spatula, carefully flip the quesadilla and cook for an additional 3 to 4 minutes until the other side is also golden brown and crispy.
