Pancake Batter

- 1 cup milk
- 2 tablespoons melted butter, plus extra for greasing the pan
Instructions
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
- Prepare wet ingredients: In a separate bowl, whisk together the Herman starter, lightly beaten egg, milk, and melted butter to combine thoroughly.
- Combine wet and dry: Pour the wet ingredients into the bowl of dry ingredients and stir gently until just combined; be careful not to overmix as this could toughen the pancakes.
- Optional resting: Allow the batter to rest for 5 to 10 minutes to let the ingredients meld and achieve a better texture.
- Preheat cooking surface: Heat a lightly greased griddle or non-stick skillet over medium heat, aiming for approximately 325°F (160°C) for even cooking.
- Cook pancakes: Pour about 1/4 cup of batter onto the hot griddle for each pancake. Cook each side for 2 to 3 minutes until golden brown and bubbles appear on the surface.
- Flip carefully: Flip the pancakes gently once bubbles form and the underside is browned. Cook the other side until golden and cooked through.
