Perfect for mint and chocolate lovers, this decadent treat combines classic brownie flavors with a refreshing mint twist and a glossy chocolate topping.

Ingredients

Scale

Brownie Batter:

  • 1 cup unsalted butter, melted and browned
  • 8 ounces semi-sweet chocolate chips
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 3/4 cup all-purpose flour

Mint Frosting Layer:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring, as desired

Chocolate Ganache Topping:

  • 1/2 cup heavy cream, warmed
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9-inch square baking dish with parchment paper to prevent sticking and to make removing the brownies easier.
  2. Melt Chocolate and Butter: Place the semi-sweet chocolate chips in a large heat-safe bowl. Melt the unsalted butter in the microwave, then pour it over the chocolate chips. Let it sit for 1–2 minutes, then whisk until the mixture is smooth and fully combined.
  3. Add Sugars and Wet Ingredients: To the melted chocolate mixture, add granulated sugar, brown sugar, eggs, and vanilla extract. Mix thoroughly until well combined and the batter is smooth.
  4. Add Dry Ingredients: Stir in the all-purpose flour and salt until just combined. Avoid overmixing to ensure tender brownies. Pour the batter into the prepared baking dish and spread evenly.
  5. Bake the Brownies: Bake for 35–40 minutes in the preheated oven, or until a toothpick inserted in the center comes out with just a few moist crumbs. Remove from oven and allow the brownies to cool completely in the pan.
  6. Make Mint Frosting: In a mixer bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk, peppermint extract, and green food coloring. Continue mixing until the frosting is smooth, fluffy, and evenly colored.
  7. Frost the Brownies: Spread the mint frosting evenly over the cooled brownies, creating a smooth layer.
  8. Prepare Chocolate Ganache: Heat the heavy cream in a small saucepan or microwave-safe bowl until just hot, ensuring it does not boil. Pour the warm cream over the semi-sweet chocolate chips and let sit for 1 minute. Stir gently until the chocolate has fully melted and the ganache is smooth and glossy.
  9. Top with Ganache and Chill: Spread the chocolate ganache evenly over the mint frosting layer. Place the assembled brownies in the refrigerator and chill for at least 15 minutes, or until the ganache is set and firm.
  10. Serve and Enjoy: Once chilled and set, cut into 16 servings and enjoy your layered mint chocolate brownies as a decadent dessert or special treat.

Notes

  • To achieve browned butter, melt butter over medium heat until it turns golden brown and releases a nutty aroma. Allow to cool slightly before mixing with chocolate.
  • Ensure the brownies are completely cool before spreading the mint frosting to prevent melting or sliding.
  • Adjust green food coloring intensity to your preference for the mint layer.
  • Use high-quality semi-sweet chocolate chips for the best flavor in both the brownie base and the ganache.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
