Instructions

  1. Prepare the marinade: In a small bowl, combine the white miso paste, mirin, soy sauce, brown sugar, sesame oil, freshly grated ginger, and minced garlic. Mix well until the marinade is smooth and all ingredients are fully incorporated.
  2. Marinate the cod: Place the cod fillets in a shallow dish or a resealable plastic bag. Pour the prepared marinade over the fillets and evenly coat each piece. Cover the dish or seal the bag and refrigerate for 30 minutes up to 2 hours to allow the flavors to penetrate the fish.
  3. Preheat the oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it to prevent sticking.
  4. Prepare the fish for baking: Remove the cod fillets from the marinade, letting any excess drip off. Arrange the fillets on the prepared baking sheet, spacing them evenly.
  5. Bake and broil the cod: Bake the fillets in the preheated oven for 12 to 15 minutes or until the fish flakes easily with a fork. In the final 2 minutes of baking, switch the oven to broil to create a golden, caramelized glaze on the surface.
  6. Garnish and serve: Remove the baked cod from the oven, transfer to serving plates, and sprinkle with chopped green onions and toasted sesame seeds. Serve immediately while hot for the best flavor and texture.

Notes

  • For best results, avoid marinating the fish for longer than 2 hours as the miso can start to cure the fish and alter the texture.
