Description

Miso Mushroom Crispy Rice is a flavorful and texturally delightful dish featuring crispy golden sushi rice topped with a savory miso and shiitake mushroom sauté. This vegetarian recipe combines umami-rich miso paste with earthy mushrooms and aromatic seasonings, resulting in a satisfying meal perfect for dinner or entertaining. The crispy rice base provides a crunchy contrast to the soft mushroom mixture, creating a balanced and visually appealing dish that’s both simple to make and impressive to serve.

Ingredients

Scale

Rice

  • 1 cup sushi rice
  • 1 ½ cups water

Mushroom Mixture

  • 2 tablespoons vegetable oil
  • 8 ounces shiitake mushrooms, sliced
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons white miso paste
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • Sea salt, to taste

Garnishes

  • 2 green onions, chopped
  • Optional: sesame seeds for garnish

Instructions

  1. Prepare the Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Drain the rice thoroughly.
  2. Cook the Rice: In a medium saucepan, combine the rinsed rice with 1 ½ cups of water. Bring to a boil over high heat, then reduce the heat to low and cover. Let it simmer for 18-20 minutes until the rice is tender and the water is absorbed.
  3. Cool the Rice: Remove the saucepan from heat and keep it covered. Let the rice rest for an additional 10 minutes to finish steaming. Fluff the rice gently with a fork afterward.
  4. Sauté the Mushrooms: Heat vegetable oil in a large skillet over medium heat. Add the sliced shiitake mushrooms and sauté for 5-7 minutes until they soften and turn golden brown.
  5. Add Flavorings: Stir in the minced garlic, grated ginger, white miso paste, soy sauce, and sesame oil into the mushrooms. Cook and mix thoroughly for 2-3 minutes to combine the flavors well.
  6. Combine Ingredients: Pour the mushroom mixture over the fluffed rice. Using a wooden spoon, gently fold the ingredients together until the rice is evenly coated with the miso mushroom topping.
  7. Crisp the Rice: In the same skillet, spread the rice mixture into an even layer. Cook over medium heat for 10-15 minutes, pressing down lightly, until the bottom layer becomes crispy and golden.
  8. Serve: Remove from heat and transfer to serving plates. Sprinkle chopped green onions and sesame seeds on top, if desired, and serve immediately for optimal texture and flavor.

Notes

  • Use fresh shiitake mushrooms for the best flavor and texture. Organic mushrooms are recommended if available.
  • You can adjust the intensity of the miso flavor by adding more or less miso paste according to your taste preference.
  • Adding a dash of chili flakes or sriracha to the mushroom mixture can provide a spicy kick if desired.
  • For a gluten-free version, substitute regular soy sauce with gluten-free tamari.
  • Leftovers can be stored in the refrigerator in an airtight container for 2-3 days, or frozen for up to 2 months. Reheat in a skillet to retain crispiness.
  • Try mixing shiitake mushrooms with other varieties, such as oyster or cremini, for enhanced flavor and texture.
  • Adding cubed tofu or tempeh to the mushroom sauté increases the protein content and heartiness of the dish.
