Ingredients
Scale
Pickled Peaches
- 4 fresh peaches, sliced into wedges (nectarines can be used as a substitute)
- 1 cup white balsamic vinegar
- 1 cup white vinegar (apple cider vinegar as alternative)
- 1 tablespoon kosher salt
- 2 tablespoons honey
- 1 cup water
Skewers
- 8 slices prosciutto (thinly sliced salami can be substituted)
- 1 cup mozzarella pearls (burrata can be used instead)
- 8 leaves fresh basil (mint as a substitute)
Dressing
- 3 tablespoons pickling liquid (from pickled peaches)
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 pinch fresh chopped rosemary
- 1 pinch thyme
- Salt and freshly cracked black pepper, to taste
Instructions
- Pickle the Peaches: Slice fresh peaches into wedges and place them in a clean jar. In a saucepan, combine white balsamic vinegar, white vinegar, kosher salt, and honey. Heat gently, stirring until salt and honey dissolve completely. Remove from heat and stir in cold water. Pour the pickling liquid over the peach wedges, ensuring they are submerged. Let them pickle for 30 minutes to absorb the tangy-sweet flavor.
- Prepare the Skewers: Remove the pickled peaches from the jar, draining excess liquid. Wrap each peach wedge with a slice of prosciutto. Thread each wrapped wedge onto skewers, alternating with mozzarella pearls and fresh basil leaves to create colorful, flavorful bites.
- Make the Dressing: In a small bowl, whisk together 3 tablespoons of the reserved pickling liquid, olive oil, minced garlic, fresh chopped rosemary, and thyme. Season the dressing with salt and freshly cracked black pepper to enhance the flavors.
- Assemble and Serve: Arrange the skewers on a serving platter. Drizzle the herbaceous dressing over the assembled skewers. Garnish with additional basil leaves and a sprinkle of cracked black pepper if desired. Serve immediately to enjoy the fresh and vibrant flavors at their best.
Notes
- Substitute nectarines for peaches if they are out of season or unavailable.
- Use apple cider vinegar instead of white vinegar for a slightly different tanginess.
- Burrata cheese works as a creamier alternative to mozzarella pearls.
- Mint leaves can replace basil for a refreshing herbal twist.
- For a vegetarian option, omit prosciutto and use extra cheese or roasted vegetables on the skewers.
- Pickled peaches can be made in advance and refrigerated for up to 24 hours.
- Adjust seasoning in the dressing according to taste preference.
