Truffle Base
- 150g golden Oreo cookies (or plain / gluten-free biscuits)
- 60g vegan or dairy-free cream cheese
Coating and Decorations
- 200g dairy-free white chocolate
- Black food gel
- Orange food gel
- Strawberry laces or candy pencils (for the scarf)
Instructions
- Prepare the tray: Line a baking tray with greaseproof paper and set aside to keep your truffles from sticking during freezing.
- Crush the cookies: Place the golden Oreo cookies into a food processor or blender and pulse until they turn into fine crumbs. If you don’t have a blender, crush the cookies using a rolling pin inside a sealed bag.
- Mix truffle base: Transfer the cookie crumbs into a large bowl and add the vegan cream cheese. Stir thoroughly until the mixture becomes sticky and holds its shape when squeezed into balls.
- Shape the snowmen: Using clean hands, weigh out 20g of the mixture into a larger ball and 7g into a smaller ball. Stack the smaller ball on top of the larger one to form a snowman figure. Repeat this with the remaining mixture and arrange the snowmen on the prepared tray.
- Freeze until firm: Place the tray in the freezer for around 20 minutes or until the truffle balls are firm to touch.
- Melt the white chocolate: About 5 minutes before removing the truffles, melt the dairy-free white chocolate in a heatproof bowl set over a saucepan of simmering water (bain-marie). Alternatively, microwave in short bursts, stirring until smooth.
- Coat the truffles: Take the snowmen out of the freezer and either insert a toothpick into the bottom of each truffle to dip into the melted chocolate or place the truffle on a fork and spoon melted chocolate to coat evenly. Let excess chocolate drip back into the bowl. Repeat for a thicker coating if desired.
- Set the coating: Return the coated truffles to the lined tray and place them back into the freezer for 5-10 minutes until the chocolate sets rapidly.
- Prepare decorations: Tint small amounts of leftover white chocolate with black and orange food gels separately. Transfer each colored chocolate into piping bags with the tip snipped off for easy decorating.
- Decorate the snowmen: Pipe an orange carrot-shaped nose, then add black eyes, buttons, and a mouth on each snowman using the colored chocolates.
- Add the scarves: Cut strawberry laces to size and wrap around each snowman’s neck as scarves. Use a small dab of melted white chocolate if needed to secure the scarves in place.
- Final setting: Place the decorated snowmen back in the freezer for 5 minutes to fully set the decorations and chocolate details.
- Serve and enjoy: Remove from freezer and indulge in these charming, festive no-bake truffles fresh and cold.
