Ingredients
Scale
Oat Base
- 2/3 cup peanut butter
- 3/4 cup old fashioned rolled oats
- 2 tbsp maple syrup
Regular Filling
- 1 tbsp peanut butter per oat cup
Protein Filling (Optional)
- 1/2 cup peanut butter
- 3 tbsp protein powder
Chocolate Coating
- 1 cup chocolate chips
- 2 tsp oil (for melting)
- Flaky sea salt (optional)
Instructions
- Prepare the oat base: In a mixing bowl, stir together the peanut butter and maple syrup until smooth and well combined. This creates the sticky binder for the oat base.
- Add oats: Add the rolled oats to the peanut butter mixture and mix until fully combined, ensuring the mixture is sticky and uniform.
- Form the base: Scoop about 2 tablespoons of the oat mixture into silicone muffin molds. Press down firmly with a spoon to form an even, compact base to prevent crumbling later.
- Add filling: Top each oat base with 1 tablespoon of peanut butter for the regular filling, or mix peanut butter with protein powder to create the protein filling. Spread the filling evenly over each base.
- Freeze to set base and filling: Place the molds in the freezer for 20 minutes to firm up the oat base and filling layers.
- Melt the chocolate: In the microwave, melt the chocolate chips with oil in 30-second increments, stirring well between each until smooth and glossy.
- Coat with chocolate: Spoon the melted chocolate over each cup, fully covering the filling layer.
- Final freeze: Return the cups to the freezer for another 20 minutes or until the chocolate topping is completely set and firm.
- Serve: Remove the cups from the silicone molds, sprinkle with flaky sea salt if desired, and enjoy right away or store them in the freezer.
Notes
- Press the oat base firmly into molds to avoid crumbling when eating.
- Store finished oat cups in an airtight container in the freezer for up to 3 weeks to maintain freshness.
- Let the cups sit at room temperature for 3–5 minutes before eating for the best chewy and creamy texture.
- Use dark chocolate for a richer, more intense chocolate flavor or milk chocolate for a sweeter taste.
- Silicone muffin molds work best to easily pop out the oat cups once frozen and set.
