  • 1/4 cup heavy whipping cream
  • 1 tbsp confectioners’ sugar
  • 1/2 tbsp matcha powder
  • 1/8 tsp vanilla extract

Tiramisu Assembly

  • 4 ladyfingers

Milk Pour

  • 2 tbsp heavy whipping cream
  • 2 tbsp milk
  • Matcha powder (for dusting)

Instructions

  1. Prepare Matcha Syrup: In a small bowl, mix matcha powder, granulated sugar, and a small amount of hot water until smooth with no lumps. Add the remaining hot water and stir well. Let the syrup cool completely before stirring in dark rum to preserve the flavor and alcohol.
  2. Make Mascarpone Cream: In a medium bowl, whip heavy cream, confectioners’ sugar, matcha powder, and vanilla extract until the mixture thickens and stiff peaks form. Gently fold in softened mascarpone cheese until fully combined. Refrigerate the cream until ready to use to maintain its firmness.
  3. Soak Ladyfingers: Quickly dip two ladyfingers, one at a time, into the cooled matcha syrup, coating both sides without letting them become soggy. Arrange them side by side in the center of your serving plate.
  4. Layer Cream: Pipe or spread a generous layer of the matcha mascarpone cream over the soaked ladyfingers, evenly covering them.
  5. Repeat Soaking and Layering: Dip the remaining two ladyfingers into the matcha syrup and place them on top of the cream layer. Then pipe or spread the remaining mascarpone cream over the second layer of ladyfingers.
  6. Chill the Tiramisu: Refrigerate the assembled tiramisu for at least one hour to allow it to set and the flavors to meld. If chilling longer, cover it tightly to prevent drying out.
