  • ½ cup feta cheese, crumbled

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to ensure it’s hot enough for perfectly roasted carrots.
  2. Prepare Carrots: Wash and peel the carrots thoroughly, then slice large carrots in half lengthwise so they roast evenly.
  3. Arrange Carrots: Line a baking sheet with parchment paper and evenly spread out the carrots on the sheet to avoid overcrowding.
  4. Make Glaze: In a small bowl, whisk together olive oil, honey, water, minced garlic, salt, and pepper until well combined.
  5. Coat Carrots: Pour the glaze over the carrots on the baking sheet, tossing gently to coat all pieces evenly.
  6. Roast Carrots: Place the baking sheet in the oven and roast the carrots for 20 to 25 minutes, stirring halfway through to ensure even cooking and caramelization.
