- 2 tbsp pure honey
- 1 tsp water
- 1 clove garlic (minced)

- ½ cup feta cheese, crumbled
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to ensure it’s hot enough for perfectly roasted carrots.
- Prepare Carrots: Wash and peel the carrots thoroughly, then slice large carrots in half lengthwise so they roast evenly.
- Arrange Carrots: Line a baking sheet with parchment paper and evenly spread out the carrots on the sheet to avoid overcrowding.
- Make Glaze: In a small bowl, whisk together olive oil, honey, water, minced garlic, salt, and pepper until well combined.
- Coat Carrots: Pour the glaze over the carrots on the baking sheet, tossing gently to coat all pieces evenly.
- Roast Carrots: Place the baking sheet in the oven and roast the carrots for 20 to 25 minutes, stirring halfway through to ensure even cooking and caramelization.
- Finish and Serve: Remove the carrots from the oven, sprinkle crumbled feta cheese and fresh dill on top, and serve immediately while warm and flavorful.
