Salmon Patty Ingredients
- 1 lb salmon (cooked and flaked)
- 1/2 cup green onions (chopped)

- 1 1/2 cups Panko bread crumbs (plain)

- 1/2 teaspoon paprika

- 1/4 cup mayo

Instructions
- Bake the Salmon: Preheat the oven to 425˚F. Place the salmon skin-side down on a lightly greased baking sheet. Season with salt and pepper, brush with olive oil, and bake uncovered for 10 minutes until cooked through.
- Flake the Salmon: Remove the salmon from the oven and discard the skin. Use a fork to flake the salmon into small pieces, removing any bones you find.
- Mix Ingredients: In a mixing bowl, combine the flaked salmon with chopped green onions, minced garlic, grated ginger, panko breadcrumbs, Italian herbs, paprika, dried parsley, salt, pepper, beaten eggs, mayonnaise, lemon juice, hot sauce (if using), and lemon zest. Mix thoroughly using your hands until well incorporated.
- Form Patties: Using an ice cream scoop to portion evenly, shape the mixture into uniform patties about the size of a small burger.
- Pan-Fry the Patties: Heat canola or vegetable oil in a skillet to about 1 inch depth until sizzling. Carefully place the salmon patties in the pan and cook each side for 4-5 minutes or until golden brown and crisp, turning gently to avoid breaking.
- Drain and Serve: Remove the cooked patties and drain on paper towels to absorb excess oil. Serve warm with your choice of dipping sauce, or make into salmon burgers, or serve over rice or fresh salads.
